Pizza Bianco with chèvre, caramelized onions & polka dots

For 2 pizzas:

  • 1 package of pizza bases white cabbage base (2 pieces)
  • 4 tbsp sour cream 
  • 100 grams of goat 
  • 1 large yellow onion
  • 1 tbsp butter 
  • 2 polka dots
  • Arugula
  • Salt & pepper 
  1. Preheat the oven to 250 degrees above and below. Leave the tray in the oven to heat up.
  2. Start with the caramelized onion. Fry the onion in butter over low heat until it gets some color, about 30 minutes. Season with salt and pepper.
  3. Peel the polka dots. Mandolin them thinly and then put them in cold water (to get them really crispy). 
  4. Spread the creme fraiche on the pizza bases, NOTE! It is important not to leave any edges, but spread the creme fraiche all over the base so that it does not burn.
  5. Crumble over the chèvre. 
  6. Place the pizzas in the oven on baking paper and a plate and let the cheese get some color, about 5-6 minutes. 
  7. Finally, top the pizzas with the caramelized onion, polka dots and arugula. Salt and pepper the pizzas before serving.
