  • 1 breadless pizza base on white cabbage
  • 1 dl hummus
  • 1/4 red onion
  • 1/2 zucchini
  • 1/2 fennel
  • 1/2 package of feta cheese
  • 1 pot of fresh basil
  • 2 tbsp pine nuts
  • 1/2 dl olive oil
  • 1/2 lemon, juice + zest
  • 1 clove of garlic
  • 1 tsp honey
  • Salt & freshly ground black pepper
  • 1 large handful of arugula
  • White cabbage base
  • Vegetarian

Food Pharmacy's Friday pizza with hummus and herb pesto

Do like Food Pharmacy and replace the Friday taco with the Friday pizza.
The recipe is calculated for 1 pizza.

Do the following
  1. Preheat the oven to 250 degrees on high and low heat. Leave the tray or pizza stone in the oven during heating so that it gets really hot. Remove the pizza base from the freezer and place it on baking paper.
  2. Spread the hummus all over the base (leave no visible edges on the pizza). Finely slice the red onion, zucchini and fennel with a cheese slicer, mandolin or knife and distribute evenly over the pizza. Crumble the feta cheese over the pizza. Place the pizza on the hot plate or pizza stone and bake for about 5-7 minutes or until the feta cheese is slightly melted.
  3. Mix the basil, pine nuts, olive oil, lemon juice + zest, garlic, honey, salt and pepper. Spread the pesto over the pizza and top with arugula and some extra olive oil.
